Eating Healthy

Hubby and I have decided to take our health a little more serious. I mean, lets face it, we're not getting any younger... sigh... So for dinner the other night, I made a salad that was so delicious. I was impressed. I got the recipe from a friend. My sister made it for my mom and then I tried it.

I even gave up my ranch dressing and tried Kraft's Light Parmesan Asiago Balsemic Vinegar dressing. It was delicious! I took chicken breast and seasoned it really well and baked it in the oven. It was the perfect dinner. And it felt so good eating healthy.

Here's the recipe for the salad:

4 cups fresh baby spinach
1 can (15 ounces) black beans, rinsed and drained
1 cup chopped sweet yellow pepper (I used red pepper)
2 medium tomatoes, cut into wedges
1 cup shredded zucchini (I used carrots)
1 cup (4 ounces) shredded cheddar cheese
1/2 cup chopped walnuts, toasted (I used cashews)
Salad dressing of your choice

Directions
In a large salad bowl, combine the spinach, beans and pepper. Top with tomatoes and zucchini; sprinkle with cheese and walnuts. Serve with salad dressing. Yield: 4 servings.

This salad sounds so delicious! It's amazing how satisfying a great green salad can be. We bought a large container of mixed greens last week and have been eating salad every day with many variations. I will have to try this salad, thanks for sharing!
