Get Ready for Valentine's Day!

Ok guys, it's not too late to order something for Valentine's Day. I already ordered my hunny's gift. Usually we don't exchange gifts because we have so many bills, but I got a good deal. And he said he got me something. lol We are lining up a babysitter (aka the grandparents) and we are going on a date the Friday before Valentine's Day. It's easier to go a couple of days earlier. Motherly Advice

As many of you know, I have a 3 year old son. He is the joy of my life! I just love being a mom and he is the biggest blessing in my life.
He is usually an easygoing little boy. He is always happy and smiling. And he is a sweetheart!
Well, the last few days we have been having issues getting him to bed. The first time we noticed a problem, it was about 5 in the morning and he came running in our room, jumps in our bed and says there is something in his closet. Well, it was time for hubby to get ready for work, so I just left him in my bed and we cuddled and fell back asleep.
Now every night we put him to bed, he freaks out. His demeanor totally changes. He gets really stressed and nervous. He climbs in bed and keeps talking about something being in his closet. You can look at him and see the stress in his face. It is so sad. :( We have tried everything! He has a nightlight in his room, we pray before going to bed, he sleeps with a bunch of stuffed animals and blankets. I even tried to give him Spiderman for "protection". Oh and he always sleeps with his boombox on playing lullibies.
We check the closet everynight and show him there is nothing there. Last night the only way he fell asleep was when I sat in his bed with him. I left after he was fast asleep. BUT at 2 in the morning, he shows up in my bed again terrified and complaining about there being something in his closet.
What else can we do? I don't want him to be afraid of his room or of falling asleep...

Monday Madness!!! My Emmy Baby


This week's Monday Madness Review is a very cute Etsy store called My Emmy Baby. When I found her store, I just fell in love with it. I needed a shirt right away and she worked with me and my schedule. I was so impressed. She was so sweet and patient with me. I received the shirt a few days earlier than I thought and it was neatly packaged. She even sent a card with directions on how to wash it. :) My Emmy Baby makes lots of different custom shirts and onesies for girls and boys. And the best part is that she is very reasonably priced! Bon Appetit! Terrific Tuna Melt

I tried this new recipe I got from a friend and it was soooooooooooo yummy! If you like tuna, this is a must try!


Terrific Tuna Melts

4 crusty hoagie rolls cut in half length wise
6 12 oz cans of chunk light tuna in water, drained
1/2 jar of kalamata olives, pitted and finely chopped
3/4 c and 3 Tbsp mayo (or to taste)
1/2 finely chopped red onion
Sliced tomatoes
Provolone cheese
1 Tbsp pepper
Salt to taste

Combine tuna, olives, onion, pepper, and salt in a large bowl and stir.
Spread rolls out on baking sheet, and spread with a thin layer of mayo. Place sliced tomato over rolls. Spoon tuna mixture on top of tomatoes and top with Provolone cheese. Sprinkle with pepper. Broil for 5 minutes, or until cheese is melted and bubbly.

Monday Madness!!! 2Kute Soapsaver


We are kicking off a new weekly special on the blog. Each week I will review an item that I have received from a store.

This week I will review 2Kute's soapsaver. I got one of her soapsavers last month and love it! It's so ecofriendly. It is made using 100% cotton yarn. She used a stitch that gives just the right amount of texture to help with exfoliation.

Whenever I use the soapsaver it makes my skin feeling so super soft! Now my showers take even longer. :)

COFFEE

When I saw this, I totally thought of me. hahaha! I love coffee. It is such a yummy treat. I love it when my husband surprises me to an unexpected trip to Starbucks. Or sometimes he comes home with a Starbucks treat for me. He knows just how to order my coffee - an upside down caramel macchiato. YUM! But, our trips to Starbucks have been minimized. What I did was buy a bad of Starbucks coffee from Wal Mart and I make it in the mornings. It's not the same, but it's still a pick me up. I used to like it with vanilla creamer, but now I just drink it with sugar. It's good. Not a caramel macchiato, but still good. Some people drink cafe con leche, or coffee and milk. I do it sometimes and it's delicious too. All you do is get half a cup of milk, heat it up in the microwave, then mix it with sugar and fill the rest of the cup with coffee. And there you have it, cafe con leche. Try it and let me know what you think!

Bon Appetit! Monday


It is 23 degrees over here today. Way too cold for Fl. Today is the perfect weather for soup and hot chocolate. I found this recipe that I just am dying to try.

Rich 'N Thick Hot Chocolate
Ingredients
1 cup water
2 (1 ounce) squares BAKER'S Unsweetened Baking Chocolate
1/2 cup sugar
3 cups milk
1 teaspoon vanilla
Directions
Place water and chocolate in heavy medium saucepan; cook on low heat until chocolate is completely melted and mixture is well blended, stirring constantly with wire whisk. Add sugar; mix well.
Bring to boil on medium-high heat. Boil 3 min., stirring constantly. Gradually add milk, stirring with wire whisk until well blended. Stir in vanilla. Reduce heat to medium.
Cook until mixture is heated through, stirring occasionally.

BRRRRRRRRRR! It's cold


Our winters are usually not very cold. For Christmas most years, I've ended up wearing a TShirt and flip flops. lol But this last week things have been very cold here in FL. Too cold!
I don't mind the cold. In fact, I am one of those people that complain when it's too hot. But now I am complaining because it's too cold. hahaha. I don't mind it if it was in the 60s. But it's been in the 20s and 30s here. WOW. I could never handle living up north. lol
What do you guys do when it's really cold? What do you do if you get snow days? Do you enjoy the day off and go play or do you just sit at home by the fireplace with a cup of hot cocoa?

Bon Appetit! Monday

The weather has been sooooo super cold. In Fl, we are not really used to being this cold. So this weekend, I made a very yummy potato soup. It is the easiest recipe and very delicious. Try it out and let me know what you think! Enjoy!

Potato Soup


4 to 5 cups cubed potatoes, about 3 pounds
1 can cheddar cheese soup
1 can cream of celery soup
1 soup can water
2 teaspoons chicken bouillon granules
6 to 8 slices cooked bacon, diced
1/4 cup finely chopped red bell pepper or use 2 tablespoons chopped pimiento
1 cup chopped green onion, with much of the green
Dash ground black pepper
1/4 cup chopped fresh parsley
dash thyme

Preparation:Combine in crockpot the cubed potatoes, soups, water, bouillon, bacon, bell pepper, and green onion and pepper. Cover and cook on low heat for 7 to 9 hours. Add parsley and thyme for the last hour of cooking time.Potato soup serves 4.
